After more than a year of bullet journal obsession, for 2018 I decided it was time to put down my Leuchtturm and stop bullet journalling. Here is why I stopped, and how I’m keeping myself organized instead. Some links in this post are affiliate links, which means that I may receive a small commission if you click or purchase an item. I had a well documented love affair with bullet journaling. I actually first discovered blogging through bullet journaling, and my introduction to bullet journaling was the first post on Xoxo, Rosana more than a year ago! What I Eat in a Week as a Vegan
In an attempt to forever answer the question “Where do you get your protein from?” I recorded every meal I ate in a week. Now about to hit 6 months as a vegan, I’ve finally figured out a way to spend minimally, eat healthy food, and even cook (my how far we’ve come)! Sunday I start the morning off with a cup of green machine or smoothie before heading to my favorite yoga class. I go straight from class to Whole Foods to do all my grocery shopping for the week. https://www.instagram.com/p/BdlXpziFfMA/?taken-by=wholefoods My grocery list for this week: 2 cans of chickpeas Quinoa Spinach Red Onion Bananas Berries Tofu Almond…

Vegan’s Guide to Eating Your Way Through the Holidays
I’ve been vegan for almost three months now, so this will be my first set of holidays as a vegan. With Thanksgiving next week and before we know it Christmas will have arrived. Here is how I’m planning to take on the holidays at home as a vegan. Everyone in my life know just how much I love the holidays. From the apple pie at Thanksgiving to all those cookies for Christmas, I have 21 years of experience fully embracing the season. I only have three months of veganism under my belt. Although my family has been pretty supportive, I’ve spent most of the last three months at school in…

I Tried Only Cooking Pinterest Meals
In this week’s installation of will Rosana ever be able to feed herself, I try to make only meals I found on Pinterest. I may never be a Pinterest mom (shocking, I know), but did I at least learn a new recipe? Maybe. This was not my first attempt at meal planning. I have a long history of not being able to put together a meal plan and execute it, but this summer I finally hit my groove. Multiple weeks of creating and following these plans, I was feeling confident enough to take on the big leagues of pinterest. View this post on Instagram In honor of #bulletjournalday, here is…

7 Questions Every College Student Should Ask Themselves Before the New School Year
September has arrived, and with a school on the quarter system, I’m using my last couple weeks to start getting ready for the new school year! I’ve found that doing an end of quarter review is really helpful in the process of achieving those goals so before I make the new list, these are the 7 questions I asked myself to keep myself on track. Every quarter, I use an adapted version of Lisa Jacob’s Review to make sure I’m on the right track. Since summer is the end of the year, I decided to undertake Lisa’s 40-question Best Year Ever self diagnostic. A lot of the questions weren’t well…

Eat Your Way Through Pilsen (Gentrification Free)
Over the last few months I finally got to experience summer in Chicago without snow and dreary weather! And it was incredible! Since I’ve been working in Pilsen, a neighborhood on Chicago’s southwest side, I fell in love with it so here is my guide to the best of Pilsen. From food to culture, Pilsen is one of the greatest neighborhoods Chicago has to offer. I’ve been working near the 18th street pink line stop, so most of these recommendations are within walking distance of it. Gentrification in Pilsen Over the last decade, Pilsen has experienced rising rents and increased development as neighborhoods like West Loop on its north side…

Vegan for a Month
My meal planning struggles have reached new heights this summer, since I have to cook all my meals, so I asked my cousin, Kaitlyn, to write about her experience trying the hardest thing in the whole world: her month meal planning as a vegan. Veganism. Carnivores everywhere clutch their steaks in disbelief and pray it isn’t contagious. Family members furtively assure themselves it’s a phase and will be long over with by Thanksgiving. The rest of the world looks on in various stages of derision and apathy at the tree-hugging hippie trying in vain to save the cows. Take it from me. In my extensive month as a vegan (plus…

End of Year Review 2016-2017
What a year! In a whirlwind, I’m ~officially~ halfway done with college and I made it out (mostly) alive. Remember those goals I had for the year? Well, here is how they went and a sneak preview of what the summer could have in store for me! This year was a rollercoaster of emotion. Life knocked me down a few times, but I came back better than ever, and am ready to take on the world. As you know, at the end of every quarter, I try to do a comprehensive life review-here are the Fall and Winter incarnations- to make sure that I am on the right track. The…
